In contrast to the buttery bread products of other countries, in Crete bread or rusk is kneaded from a mixture of flours (barley, wheat, rye). Traditionally, yeast is used for fermentation and this gives it a slightly acidic taste.
Modern pastries come in many different flavours, and it is worth trying sweet or savory buns: multigrain, with raisins, with olive, with sesame, stuffed with cheese and much more.
